LONDON BROIL WITH SUN-DRIED TOMATO SAUCE

Choosing a tasty and healthy recipe that will not boost blood sugar levels is not difficult.  It just requires a little care and planning.  This tasty diabetic recipe will titillate your taste buds while maintaining low blood sugar levels.

Tomato Sauce:

1 oz pkg sun-dried tomatoes          2 Tbsp parsley, chopped

2 Tbsp white wine vinegar             1/2 tsp capers, finely chopped

1 Tbsp olive oil                                     1/8 tsp tarragon (dried)

1 clove garlic, minced                        Freshly ground pepper

London Broil:

1 lb boneless top round or                  1/2 tsp. onion powder

  flank steak, cut 1 inch thick            1 tsp. balsamic vinegar

2 cloves garlic, minced                        Freshly ground pepper to taste

Simmer tomatoes in water to cover for 10 minutes.  Remove from heat and let cool until ready to use.  Drain tomatoes and discard cooking liquid, coarsely chop.  Combine the remaining ingredients; mix and refrigerate until ready to use.  Yield 1/2 cup sauce.

Trim all fat from steak.  In a small bowl combine garlic, onion powder, balsamic vinegar and pepper.  Rub into meat.  Let marinate for 1 hour.  Grill or broil 4 inches from heat about 5 to 6 minutes per side.

Let stand, rest 10 minutes before cutting into thin slices at 45 degree angle.  Serve with 1 tablespoon sauce.  Yield 6 servings.
